Step by step process
Preparing the mixture

For the frikadellen, first soak the diced bread roll in milk and let it soften for 10 minutes.

Dice the onion finely and saute it in a tablespoon of butter until translucent. Let it cool.

Lightly squeeze the softened bread roll to remove the excess milk.
Working the meat

In a bowl, combine the pork and beef, the squeezed bread roll, the cooled onion, the egg and the mustard.

Season the mixture with salt and pepper, then work it thoroughly by hand until it holds together.
TIP:Before handling, dampen your hands and keep the mixture cold. Knead it for 2-3 minutes until the mixture holds its shape, but do not overwork it, so that it stays moist.

If the mixture is too soft, mix in the breadcrumbs and let it rest in the fridge for 10 minutes.

With damp hands, shape the meat mixture into 8 patties about 2 cm thick.
Frying and serving

Heat the butter in a skillet and place the patties so they do not touch.

Fry them over medium heat for 4 minutes per side until golden and cooked through in the center.
TIP:Brown ground meat in smaller batches over higher heat so it doesn't steam in its own juices. Let it sear briefly without stirring first, then break it up into smaller pieces.

Let the finished patties rest briefly, sprinkle them with parsley and serve with potato salad or in a bun.
More tips:
If you do not have a bread roll, replace it with two tablespoons of breadcrumbs soaked in milk. They stay moist even without bread.
The fried patties keep in the fridge for up to three days and taste great cold too, for example in a bun with mustard.
