German streusel cake, known as Streuselkuchen, is a soft sheet of yeast dough topped with a thick layer of buttery streusel. The dough rises slowly, the butter in the crumb topping fills the kitchen with its aroma, and a tender golden crust forms on top. In Germany it has belonged to Sunday coffee for generations and bakes on a full tray. All you need is flour, butter, milk, and yeast, no fruit and no cream. You cut it while it is still warm and the scent of cinnamon drifts through the whole house.

Step by step process

Yeast dough

    For the streusel cake, first activate the yeast. Pour the lukewarm milk into a bowl and stir in the crumbled yeast with a teaspoon of sugar. Let it foam for 10 minutes.

    TIP: 

    The milk temperature for activating yeast should be around 37-38 °C. Crumble fresh yeast or sprinkle in dried yeast, add a teaspoon of sugar and stir briefly. After 5-10 minutes, foam and a yeasty aroma will form. If no foam forms, the yeast is no longer alive and you need a new package.

    Add the remaining sugar, a pinch of salt, the egg, softened butter, and the activated yeast to the flour. Work it into a supple dough that does not stick to your hands. Cover it with a towel and let it rise in a warm spot for an hour, until it doubles in volume.

Buttery streusel

    Cut the cold butter into cubes. Rub it into the flour with sugar, vanilla sugar, and cinnamon, working the mixture with your fingers until uneven coarse crumbs form.

    Set the finished streusel in a cool place so the butter stays firm. The cold topping holds together better in the oven and does not melt into the dough.

Baking

    Spread the risen dough into an even layer on a greased baking tray and shape a slight rim with your fingers. Let it rest for another 20 minutes so it rises again on the tray.

    Heat the oven to 180 °C. Then scatter the whole batch of streusel densely over the dough so it covers the entire surface.

    Bake for 30 minutes, until the streusel turns golden and the edges of the cake brown. Let the baked cake cool on the tray. Cut it into squares before serving.

More tips:

The streusel turns out best from cold butter. If your kitchen is warm, put the finished topping in the freezer for 15 minutes before you scatter it over the dough.

The cake stays moist for two days under a towel. On the second day, warm it briefly in the oven so the streusel crisps up again.
