Crispy roasted potatoes with rosemary and garlic

You make roasted potatoes with rosemary by cutting potatoes into even wedges and tossing them with olive oil, chopped garlic, rosemary leaves, salt and pepper. You spread them on a tray in a single layer so the pieces don't touch and hot air circulates around them. You roast at 200 °C for about 35 to 40 minutes, stirring halfway so they brown on all sides. The potatoes stay soft inside and turn golden and crisp on top. You serve them with meat or fish.

Preparing Potatoes

    For these roasted potatoes, first wash the potatoes thoroughly. If they are new or have a thin skin, you do not need to peel them. Otherwise, peel them.

    Cut the potatoes into evenly sized wedges or cubes about three to four centimeters across, so they cook evenly and hold their shape.

Seasoning and mixing

    In a large bowl, toss the chopped potatoes with olive oil, finely chopped garlic, fresh rosemary leaves, salt, and freshly ground pepper. Mix thoroughly with your hands or a spoon so that every piece is evenly coated in oil and seasoning.

Baking potatoes

    Preheat the oven to 200 °C (180 °C for fan oven).

    Line the baking sheet with parchment paper and spread the potatoes on it in a single layer so the pieces do not touch and have enough space around them. Only then can hot air circulate freely and form a golden crust along the edges.

    Bake for 35-40 minutes, stirring the potatoes halfway through baking to ensure they roast on all sides. The finished potatoes should be golden and crispy on the surface.

Serving

    Serve them immediately, preferably sprinkled with fresh rosemary. They taste great on their own or with a dip of your choice, alongside grilled meat or baked fish.

More tips:

For an extra crispy result, you can soak the potatoes in cold water for 10 minutes after cutting them and then dry them well.

Instead of rosemary, you can use thyme or a mix of herbs according to your own taste.
