Step by step process
Batter

These crepes need only 3 ingredients, so they are easy enough for a complete beginner. Sift the plain flour into a bowl, add a pinch of salt and crack in the eggs.

Gradually pour in the milk and whisk into a smooth batter with no lumps. It should have the consistency of thin cream.

Let the batter rest for 10 minutes. The flour absorbs the liquid and the pancakes will not tear in the pan.
Frying

Heat a pan over medium heat and wipe it with a thin layer of oil. Ladle in a little batter and swirl it around to cover the whole base.

Fry for about 1 minute, until the underside turns golden and the edges start to lift. Flip it with a spatula and cook the other side until golden too.

Stack the finished pancakes on a plate so they stay soft. Fill them savory with ham and cheese, or sweet with jam and sugar.
More tips:
The first one is usually a test. It tells you whether to add more oil to the pan or lower the heat a little.
If the batter thickens after resting, stir in a spoon of milk. A thinner batter gives thinner, more delicate pancakes.
