Caprese Sandwich with Mozzarella, Pesto and Tomatoes

Slice the ciabatta rolls lengthwise and, if needed, remove a little of the crumb so the filling fits well and the sandwich is easier to eat.

Slice the tomatoes thinly and pat the mozzarella dry with paper towels. Then slice it into even pieces as well.

Spread the cut sides of the ciabatta with basil pesto, layer on the mozzarella and tomatoes, season with salt and pepper to taste, and add arugula if desired.

Top with the other half of the bread, press the sandwiches gently, let them rest briefly, and serve whole or halved.
More tips:
Pat both the tomatoes and mozzarella dry before assembling so the bread does not become soggy and stays pleasantly firm.
If you are packing the sandwich to go, place the arugula between the pesto and tomatoes, as it helps separate the wetter filling from the bread.
