To make this caprese-style sandwich, start by preparing the bread: slice the ciabatta rolls lengthwise and, if needed, gently remove a little of the soft inner crumb so the generous filling fits well and the sandwich stays comfortable to hold and eat.

Slice the tomatoes thinly and pat the mozzarella dry with paper towels to remove excess moisture. Then slice the mozzarella into even, uniform pieces. Keeping both ingredients well dried is the key to a crispy, non-soggy, flavorful result.
Assembling the sandwich

Spread the cut sides of the ciabatta generously with basil pesto, then layer on the mozzarella and tomatoes in even slices. Season with salt and freshly ground pepper to taste, and add a handful of fresh arugula if desired for a peppery bite.
