BBQ Beef Brisket

Step by step process
Preparing the meat and seasoning

In a bowl, mix all the ingredients for the BBQ seasoning and stir well.

Trim and pat the beef brisket dry, then rub it all over with the seasoning mixture. Let it rest at room temperature for at least 30 minutes.
TIP:Before applying BBQ seasoning, brush the meat with a thin layer of mustard or oil. The seasoning sticks better, the surface stays even, and the flavors permeate.
Glazing and grilling

Prepare the grill for indirect grilling (temperature around 120-130 °C).

Lightly oil the grate to prevent the meat from sticking.

Place the brisket on the indirectly heated side of the grill (preferably in an area with no hot coals beneath the meat), or use a grill pan and cook it covered.

In a bowl, mix ketchup, honey, Worcestershire sauce, apple cider vinegar, salt, and pepper. this will be the BBQ glaze.

Grill the meat slowly for 3 hours, then wrap it in a double layer of foil and return it to the grill for another 2 hours.

After that time, unwrap the meat, brush it with the BBQ glaze, and continue grilling uncovered for about 1 hour, until a thermometer inserted into the thickest part reads around 90-95 °C. Apply the glaze twice during the last hour.
TIP:When wrapping meat in aluminum foil, add a small amount of liquid (broth, beer, or apple cider vinegar) and seal. The steam inside helps the meat cook through and stay juicy.
Serving

Let the finished meat rest under foil for at least 15 minutes.

Slice into thicker pieces against the grain and serve, for example, with fresh bread or a salad.
More tips:
For a pronounced smoky aroma, add a few pieces of soaked wood (preferably applewood or hickory) to the coals while grilling.
If you can't grill for a long time, you can cook the meat in a very slow oven (120 °C) and briefly grill it at the end to finish the glaze.
