Step by step process

The batter

    These blueberry pancakes start with the batter. In a bowl combine the plain flour, sugar, baking powder and a pinch of salt. In a second bowl whisk the eggs with the milk and melted lukewarm butter.

    Pour the wet ingredients into the dry and stir briefly into a smooth, slightly thick batter. Do not overmix, a few small lumps are fine and actually keep the result light and airy. Let the batter rest for 5 minutes so the flour can fully hydrate.

Frying and serving

    Heat a pan over medium heat and lightly grease it with butter. Ladle small portions of batter onto the pan and scatter berries over each one. Now wait. Fry until bubbles form on the surface.

    Flip and fry the other side until golden. Stack them on a plate and layer with the remaining berries. Serve warm. Finish with a generous drizzle of honey.

More tips:

The pan must be properly heated, too hot and the surface burns while the inside stays raw.

Do not thaw frozen berries before adding them or the batter turns blue. Drop them onto freshly poured batter.
