Preparation

In a bowl, mix all-purpose flour, baking powder, granulated sugar, and a pinch of salt.

In another bowl, whisk the eggs with the milk.

Pour the melted butter (not hot) into the wet mixture and mix well.

Add the wet mixture to the dry ingredients and quickly mix into a smooth batter. lumps are fine.
Cooking

Lightly grease the pan with cooking oil and heat it well over medium heat.

Pour smaller portions of batter onto the pan, about 10 cm in diameter, and fry until bubbles form on the surface (about 2-3 minutes).

Flip with a spatula and fry the other side until golden, about 1-2 minutes.

Set the finished pancakes on a plate and repeat until all the batter is used.
Serving

Stack the American pancakes on a plate, drizzle with maple syrup, and garnish with fresh fruit to taste.
More tips:
For extra fluffy pancakes, don't overmix the batter and leave a few lumps.
Keep pancakes warm covered in the oven at 60 °C while you cook the remaining batches.
