Sushi - Japanese rice with fish
Sushi is the most famous Japanese dish worldwide. The base is seasoned rice with rice vinegar. The main forms are nigiri (a rice mound topped with fish), maki (a roll wrapped in nori), and uramaki (an inside-out roll).
It originally began as a method of preserving fish in fermented rice. Modern edomae sushi emerged in Tokyo in the 19th century as fast street food.
