Saffron - the world's most precious spice

Saffron is a spice obtained from the dried stigmas of the saffron crocus (Crocus sativus). Each flower contains only three red threads, which are hand-picked early in the morning. Approximately 150,000 flowers are needed for one kilogram of dried saffron, explaining its extremely high price. Saffron gives dishes a golden-yellow color, distinctive aroma, and bittersweet taste. It is a key ingredient in Spanish paella, Italian risotto alla milanese, and Persian rice dishes. Iran produces over 90% of the world'so supply.
