Olives are the fruit of the European olive tree cultivated in the Mediterranean for thousands of years. They must be cured before eating. Green olives are harvested unripe, black ones ripened on the tree. Enjoyed as a snack, in salads, on pizza, and in pasta. Source of healthy fats and vitamin E.
