Japanese noodles - udon, soba, and ramen

Udon are thick wheat noodles with a chewy texture. Soba are thin buckwheat noodles with a nutty flavour, traditionally eaten on New Year's Eve as a symbol of long life.

Ramen noodles are wavy wheat noodles made with alkaline water called kansui, which gives them their yellow color. There are also sōmen and shirataki made from konjac.
