This peanut soup comes from Ghana and ranks among the best-loved dishes of West Africa. It is built from chicken thighs, tomatoes, onion and ginger, which simmer slowly in a thick broth with peanut butter. A single chili pepper lends it a gently spicy depth that is typical of the local cooking. The aroma of toasted spices fills the kitchen and the finished dish turns a deep orange. It is served hot, most often with boiled rice or traditional fufu dough. This is a filling meal that warms and satisfies the whole family.

Step by step process

Preparing the base

    Start the groundnut soup with the aromatic base. Finely chop the onion, crush the garlic and grate the ginger. Cut the tomatoes into quarters. Season the chicken thighs with salt on all sides.

    Heat oil in a deep pot over medium heat and fry the onion until golden, about 5 minutes. Add the garlic, ginger and chopped chili pepper and stir for another 2 minutes.

Cooking the soup

    Add the chicken thighs and brown on all sides, about 5 minutes. Stir in the tomato paste and after a minute add the chopped fresh tomatoes. Pour in the poultry stock and bring to a boil.

    Mix the peanut butter with four tablespoons of warm water into a smooth paste and stir it into the pot. Reduce the heat, cover and cook for 30 minutes until the chicken is tender and the broth has thickened. Season with salt and serve with rice or fufu.

More tips:

Blend the peanut butter with warm water first, otherwise it clumps in the pot.

Serve it hot with cooked rice or traditional fufu dough.
