Crackled tops and a soft center that melts around toasted hazelnuts. These Nutella cookies with just 3 ingredients rely on nothing more than a jar of Nutella, plain flour and one egg. You stir the dough in a single bowl in a few minutes, roll it into balls on a tray, and pull out fragrant chocolate cookies twelve minutes later. The flavor is deeply chocolatey, and the inside stays soft like a mini brownie. They are great with an afternoon coffee or packed into a lunchbox for the kids.

Making the dough

    Nutella cookies live and die by a good spread, so keep a full jar ready. Preheat the oven to 180 °C and line a baking tray with parchment paper. Put the Nutella in a bowl, then add the sifted flour and the egg.

    Stir everything with a wooden spoon or a spatula until the ingredients come together into a glossy, smooth and sticky dough with no flour lumps. Do not beat it for too long, just work in the flour.

    TIP: 

    Gently fold dry ingredients into the dough using a spatula or spoon just until combined, so the dough remains moist and the baked goods soft, avoiding a tough texture caused by overmixing.

Shaping and baking

    With damp hands or two teaspoons, shape the dough into balls the size of a walnut and space them about 4 cm apart on the tray, since they spread a little while baking.

    Press each ball gently with your fingers or a fork into a disc about 1 cm thick. The typical cracks will form on the surface during baking.

    Bake for 10 to 12 minutes, until the cookies firm up at the edges but the center stays soft. Take them out while they still look slightly underbaked, or they will turn hard.

    Let the cookies set on the tray for 5 minutes, then carefully transfer them to a wire rack. Once cooled, they will be just right, soft inside and crisp at the edges.

More tips:

For a stronger hazelnut flavor, work a handful of chopped toasted hazelnuts into the dough.

Store the cookies in a sealed container, where they stay soft for a good four days.
