Mexican salsa roja from roasted tomatoes

You let the tomatoes, jalapeños, onion and garlic char in the oven, then blend them into a sauce. That is how a real Mexican salsa roja gets its deep red color and smoky depth, which a raw sauce never has. You finish the purée with fresh cilantro and a squeeze of lime. In Mexico you find it on the table with every taco, with nachos and with scrambled eggs. You control the heat with the number of chilies.

Step by step process

Roasting the vegetables

    For the salsa roja, first heat the oven to its highest grill setting. Halve the tomatoes, cut the white onion into quarters and spread them on a lined baking sheet along with the jalapeños and the unpeeled garlic cloves.

    Slide the sheet under the hot grill for about 12 minutes, until the skins of the tomatoes and chilies blacken and start to split. Turn the pieces halfway through so they char on all sides.

Blending

    Let the roasted vegetables cool for a few minutes. Peel off the blackened skins from the tomatoes and jalapeños, cut the stems off the chilies and scrape out the hot seeds if you like, then squeeze the garlic cloves out of their skins.

    Put all the vegetables into a blender, add the cilantro leaves and the lime juice. Blend until smooth, or only briefly if you prefer a sauce with small chunks.

    Taste the salsa and season with salt. If it is too thick, thin it with a spoonful of lukewarm water so it pours easily from a spoon.

Serving

    Pour the finished salsa into a bowl and let it rest for at least 15 minutes so the flavors come together. Serve it at room temperature or chilled with tacos, nachos and scrambled eggs.

More tips:

For a milder salsa, scrape the seeds and white membranes out of the jalapeños, as they hold the most heat.

Store the salsa in a sealed jar in the fridge for no more than 4 days.
