Hunter schnitzel is a hearty German Jägerschnitzel, where a tender pork cutlet is pan-fried in butter and served in a thick cream sauce full of mushrooms and onion. The mushroom sauce with beef stock gives the meat juiciness and a gently nutty flavor. It belongs to the classics of German tavern cooking and will fill the whole family. It pairs wonderfully with spaetzle or fries for a filling lunch.

Step by step process

Prepare the meat and mushrooms

    For the hunter schnitzel, slice the pork leg into 4 cutlets about 1.5 cm thick. Lightly pound the cutlets with a mallet, then season with salt and pepper on both sides.

    Wipe the mushrooms with a damp cloth and slice them thinly. Finely chop the onion and press or finely mince the garlic.

Frying the schnitzels

    Heat the butter with a little oil in a pan so it does not burn. Place the cutlets into the hot fat and fry for 3 to 4 minutes on each side until golden. Transfer the fried meat to a plate and cover it to keep it warm.

Hunter cream sauce

    Add the onion to the drippings left from the meat and saute until translucent. Add the mushrooms and saute them for 6 to 8 minutes, until the water evaporates and the mushrooms start to brown. Stir in the garlic near the end and saute briefly.

    TIP: 

    Sauté the onion over medium heat until golden or translucent. Add the garlic at the end and sauté briefly to release the aroma, but do not burn it.

    Dust the mushrooms with flour, stir, and toast for a minute. Pour in the stock, stir smooth with a spoon, and bring to a boil.

    Pour in the cream and simmer the sauce, stirring occasionally, for 8 to 10 minutes, until it thickens and coats the back of a spoon. Season with salt and pepper.

    TIP: 

    Add the cream over low heat and stir in the cheese gradually into a hot sauce that is not at a rapid boil. It will melt more evenly, and the sauce will stay smooth without lumps or curdling.

Finishing and serving

    Return the fried cutlets to the sauce along with the meat juices and warm them through for 2 minutes so they soak up the mushroom flavor. Serve the finished dish topped with sauce and sprinkled with chopped parsley, ideally with spaetzle or fries.

More tips:

Instead of button mushrooms, use fresh porcini or a mix of wild mushrooms for a more pronounced, forest flavor.

If the sauce is too thin, simmer it longer uncovered, or thicken it with flour stirred into cold cream.
