Preparation

Finely chop the onion and press or finely chop the garlic.

In a bowl, combine the ground beef and pork. Add the prepared onion and garlic, sweet paprika, salt, ground black pepper, optional hot paprika, cumin, baking soda, and chopped parsley.

Work the mixture thoroughly with your hands for 2-3 minutes until it holds together and is slightly sticky - this helps when shaping the rolls.

Cover and chill in the fridge for at least 15 minutes (ideally 1 hour) to allow the flavors to meld.
Shaping and cooking

With wet hands, shape 12-16 small cevapcici rolls, about 2 cm thick and 8 cm long. Try to keep an even diameter for uniform cooking.

Preheat a grill or grill pan to medium-high. Add a little oil to a pan. On a grill, you can cook dry or lightly brush the grate with oil.

Cook the rolls for 10-15 minutes, turning regularly with tongs, until evenly golden outside and cooked through inside. They're done when they have a golden crust and no pink juices run from the meat (if using a thermometer, the target internal temperature is about 72 degrees C).
Serving

After cooking, let the cevapcici rest for 2-3 minutes to allow the juices to settle.

Serve warm with bread, chopped onion, ajvar, or a yogurt dip, and garnish with freshly chopped parsley to taste.
More tips:
You can add a little sparkling water to the mixture for extra juiciness.
Cevapcici are best fresh. However, they can be chilled and reheated the next day - the flavors may even intensify.
