Zaalouk - aubergine salad

Zaalouk is a warm aubergine salad. The aubergine is grilled, then braised with tomatoes, garlic, cumin, paprika, and coriander until thick.

Unlike baba ganoush, no tahini is added and tomatoes are the key ingredient. Served warm with khobz bread and pairs beautifully with tagine or couscous.
