Vinaigrette - the foundation of salad dressings

Vinaigrette is a simple yet essential salad dressing composed of oil and vinegar in a traditional 3:1 ratio. The base is enhanced with salt, pepper, and mustard, which helps the emulsion hold together. Dozens of variations exist, with lemon juice instead of vinegar, with herbs, garlic, or honey. In Russian cuisine, vinaigrette refers to a beet salad with dressing. For quality vinaigrette, the choice of oil is crucial, olive oil or sunflower oil are most common.
