Tandoori Chicken, clay oven roasted chicken

Tandoori chicken is one of the most famous dishes of Indian cuisine. Chicken is marinated in yoghurt and a blend of tandoori masala spices. The distinctive red-orange colour comes from Kashmiri chilli.

The chicken is roasted in a clay tandoor oven at temperatures above 400 °C, which gives it a crispy exterior and juicy interior. It was made famous by Kundan Lal Gujral in Delhi in the 1940s. It is served with lemon and mint chutney.
