Svíčková na smetaně - The Queen of Czech Cuisine
Svíčková na smetaně is considered the flagship dish of Czech cuisine and one of the most complex traditional dishes. Beef sirloin is larded with bacon and slowly roasted on root vegetables (carrots, celery, parsley root, onion). The sauce is created by blending the roasted vegetables with cream and seasoned with lemon, sugar, and spices for a balanced flavour. It is served with bread dumplings, cranberries, and a slice of lemon.
