Sesame oil - essential ingredient of Asian cuisine
Sesame oil is produced by pressing sesame seeds and comes in two main varieties. Light sesame oil is cold-pressed from untoasted seeds and has a mild flavor suitable for cooking. Dark sesame oil from toasted seeds has an intense nutty aroma and is used to finish dishes. In Asian cuisine, it is an indispensable ingredient for stir-fries, marinades, and dressings. It contains antioxidants, vitamin E, and sesamol.
- Dark sesame oil from toasted seeds has a significantly stronger aroma than light oil.
- Light sesame oil has a smoke point of around 230 °C, suitable for frying.
- In traditional Asian cooking, dark oil is added only at the end of preparation.
- Sesame oil contains sesamol and sesamolin, natural antioxidants.
