Quince - a forgotten fruit full of flavor

Quince is the fruit of the quince tree, cultivated since antiquity in the Mediterranean. Fruits have yellow skin and hard flesh, astringent when raw. After cooking, they develop a sweet flavor and pink color. Ideal for jams, compotes, jellies, and traditional quince cheese. Contains pectin, vitamin C, and fiber.
