Pasta, Italian pasta
Pasta is the absolute foundation of Italian cuisine and a symbol of Italy worldwide. There are over 300 different pasta shapes, each with a specific purpose, some for light sauces, others for thick ragù.
We distinguish between pasta secca (dried pasta from durum wheat) and pasta fresca (fresh egg pasta). The north prefers egg pasta, while the south favours dried pasta with tomatoes and olive oil.
