Passata di pomodoro - foundation of Italian cooking

Passata di pomodoro is an Italian tomato purée made from fresh tomatoes, skinned, deseeded, and strained to a smooth consistency. Unlike concentrate, it retains a fresh tomato flavour. Used as a base for pasta sauces, pizza, and soups. In Italy, traditionally prepared at home at the end of summer.
