Maakouda - potato patties

Maakouda are fried potato patties, an affordable street food. Boiled potatoes are mixed with onion, parsley, garlic, and cumin, coated in flour, and fried until golden.

At the markets they are served in khobz bread with harissa and tomatoes for just a few dirhams. They are also served as a side dish with main courses.
