Kimchi is a traditional Korean dish of fermented napa cabbage with chilli paste, garlic, and ginger. It has a characteristic sour and spicy flavour rich in umami. It is a cornerstone of Korean cuisine. Rich in probiotics, vitamin C, and fibre.
