Jerusalem artichoke - sunflower tuber

Jerusalem artichoke is the edible tuber of Helianthus tuberosus, also known as sunchoke. It has a nutty, slightly sweet flavor and crisp texture. Unlike potatoes, it contains inulin instead of starch, making it suitable for diabetics. It is prepared by roasting, boiling, frying, or eaten raw. In modern gastronomy, it is used for creamy soups and purées.
