Jam - sweet fruity delight
Jam is a sweet fruit preserve made from whole fruit pieces or pulp cooked with sugar and pectin. Unlike marmalade (exclusively from citrus), jam contains fruit pieces. The most popular varieties are strawberry, apricot, raspberry, and plum. The key to proper consistency is the ratio of fruit, sugar, and pectin. Homemade jam is stored in sterilized jars.
- Jam must contain at least 35% fruit according to EU regulations.
- Pectin, a natural gelling agent, is derived from apples and citrus fruits.
- The oldest preserved jam recipe dates back to the 4th century.
- Properly preserved jam can last over a year.
