Fried Rice, Chinese Classic

Fried rice is one of the most fundamental dishes of Chinese cuisine. The key to success is using day-old cold rice, which is stir-fried in a wok over high heat with eggs, vegetables, and meat. Soy sauce adds an umami flavour.

It originally arose as a way to use up leftover rice. Today there are countless variations, from simple egg fried rice to luxurious versions with shrimp or salmon. The most famous is Yangzhou fried rice.
