Dolma - Turkish stuffed vegetables
Dolma means stuffed in Turkish and refers to vegetables filled with rice, herbs, and spices. The most famous are vine leaf dolma (yaprak sarma), but peppers, tomatoes, and aubergines are also stuffed.
Two varieties exist: cold with olive oil served as meze, and warm with minced meat. Cold dolma is flavoured with lemon juice, dill, and mint. It is a symbol of Turkish hospitality.
