Cheeks - a delicacy from slow braising

Cheeks are cuts of meat from the face of cattle or pigs. They contain a lot of collagen, which transforms into gelatin during slow cooking, giving the meat a silky consistency. Prepared by braising in wine or stock. Finished cheeks are incredibly tender and juicy.
