Brussels sprouts - healthy side dish

Brussels sprouts belong to the cabbage family and form small heads on a thick stalk. They are an excellent source of vitamin C, K, and folic acid. The slightly bitter flavor can be mellowed by roasting or sauteing at high heat, which gives them a pleasant caramelization. They are great in salads, baked dishes, and as a standalone side dish.
