Brochettes - Moroccan meat skewers

Brochettes are Moroccan grilled meat skewers, a beloved street food. They are marinated in a blend of cumin, paprika, coriander, garlic and spicy harissa, then grilled over charcoal.

At the souk markets they are grilled right in front of customers. Served with khobz bread and spicy harissa. Fat and pepper pieces are threaded between the meat for juiciness.
