Bouillabaisse, Fish Soup from Marseille

Bouillabaisse is a famous fish soup originating from the port of Marseille in Provence. It is traditionally prepared with several kinds of Mediterranean fish along with seafood, tomatoes and saffron.

Originally a simple meal of Marseille fishermen, today it is a luxurious dish served with toasted bread and rouille (a spicy garlic cream). An official charter for authentic preparation exists in Marseille.
