Al dente is an Italian phrase literally meaning 'to the tooth'. It describes the cooking stage where pasta is still slightly firm in the center but soft on the surface. This method is considered the only correct way in Italy. Al dente pasta has better texture, a lower glycemic index, and absorbs sauce more effectively.
