Agave - plant for syrup and tequila

Agave is a genus of succulent plants native to Mexico and the southwestern United States. Its sap is used to produce agave syrup (nectar), a popular natural sweetener with a lower glycemic index than regular sugar. The syrup has an amber color and subtle caramel flavor. Certain agave species are used to produce tequila (blue agave) and mezcal. The plant takes 7-14 years to mature before harvesting.
