Abalone, sea mollusc with a pearly shell
Abalone (genus Haliotis) is a large marine gastropod with a single, flat, mother-of-pearl shell. The flesh is lean, firm, slightly sweet, and prized as a delicacy in Asian and Californian cuisines.
- One of the most prized marine molluscs. the inside of the shell is lined with iridescent nacre.
- The flesh is firm and lean. it is usually pounded before cooking to tenderise it.
- Classically served as sashimi, grilled, or sautéed in butter with garlic.
- Several species are protected due to overfishing. much of the supply now comes from aquaculture.
