Nuremberg gingerbread with almonds is one of the most famous Christmas treats from the German city of Nuremberg. The soft, spiced base is made from ground almonds, hazelnuts, and honey, so it needs almost no flour and stays moist for days. The aroma of cinnamon, cloves, and candied peel fills the whole kitchen as it bakes. Coated in dark chocolate and topped with a whole almond, it looks straight from a Nuremberg bakery. Step by step process

Preparing the dough

    Start the Nuremberg gingerbread by whipping the eggs and powdered sugar in a bowl into a pale, fluffy foam. Beat for about 5 minutes, until the mixture lightens and thickens.

    Stir in the runny honey, ground almonds, ground hazelnuts, chopped candied orange peel, and gingerbread spice. Finally, add the flour mixed with the baking powder.

    Use a wooden spoon to combine everything into a smooth, sticky dough. Cover the bowl and let it rest for 20 minutes so the almonds absorb moisture and the mixture is easier to shape.

Shaping and baking

    Preheat the oven to 160 °C. Line a baking sheet with parchment paper. With dampened hands, shape the dough into rounds about 5 centimeters across and arrange them on the sheet with gaps between them.

    Bake for 18 to 20 minutes, until the cookies turn lightly golden and the edges firm up. They should stay soft inside, so do not overbake them. Let them rest on the sheet for a while.

Glaze and decoration

    Melt the dark chocolate in a water bath or in the microwave. Brush the cooled cookies with chocolate and place a whole almond on each one.

    Let the glaze set and store the cookies in a tin. After a few days they soften and the flavor of the spices comes through beautifully.

More tips:

Store the cookies in a sealed tin, ideally with a slice of apple. The moisture keeps them soft throughout the Christmas holidays.

You can replace the ground hazelnuts with extra ground almonds. The gingerbread will then be milder and more pronounced in almond flavor.
