Creamy mashed potatoes with Parmesan

Preparing Potatoes

Peel the potatoes with a peeler and cut them into smaller, evenly sized cubes for uniform cooking.

Place the sliced potatoes into a pot and cover them with cold water so that they are submerged.

Add a teaspoon of salt and bring to a boil.
Cooking potatoes

Boil the potatoes over medium heat for 15-18 minutes, until they are completely soft (check with a fork).

Drain the cooked potatoes through a colander and let them evaporate for 2 minutes to lose excess water.
Preparing porridge

Transfer the hot potatoes back into the pot and immediately mash them with a potato masher.

Gradually pour in the warm milk and whisk until the porridge is beautifully smooth and creamy.
