Yukhoe - Korean beef tartare

Yukhoe is a Korean beef tartare made from the freshest meat cut into fine strips. It is seasoned with sesame oil, soy sauce and garlic. An egg yolk and slices of Korean pear are placed on top.

Tenderloin or sirloin cuts are used. The city of Jinju in Gyeongsang province is renowned for its version of yukhoe.
