Wiener Schnitzel - king of Central European cuisine
Wiener Schnitzel is the flagship dish of Austrian cuisine and one of the most famous dishes in Central Europe. It is made from a thin slice of veal pounded to about 4 mm thickness, coated in flour, egg, and breadcrumbs. Frying is done in hot butter or a mixture of butter and lard, with the schnitzel repeatedly basted with fat to create a beautifully wavy crust. It is served on a warm plate with potato salad, a slice of lemon, and optionally lingonberries.
- Authentic Wiener Schnitzel is made exclusively from veal, never pork.
