Weißwurst - Bavarian white sausage
Weißwurst is a Bavarian white sausage made from veal and back fat, seasoned with parsley, lemon zest and cardamom. The sausage is not smoked, only poached in water.
It is traditionally served for breakfast before noon because without preservatives it quickly loses freshness. It comes with a pretzel and sweet mustard. The casing is not eaten. the meat is sucked out or cut free with a fork.
