Wagyu - premium Japanese beef

Wagyu means Japanese cattle and refers to four original Japanese breeds. The meat is famous for its intramuscular marbling, which gives it tenderness and a buttery flavour.

The most famous is Kobe beef. Wagyu is graded on a scale up to A5 (the highest quality). The fat melting point is lower than body temperature, so it literally melts on the tongue.
