Vindaloo, fiery curry from Goa

Vindaloo is one of the hottest dishes in Indian cuisine, originating from Goa. Meat (traditionally pork) is marinated in vinegar, garlic and a generous amount of chilli peppers, then slowly braised until tender.

The name derives from the Portuguese carne de vinha d'alhos. Goan cooks adapted the recipe, replacing wine with vinegar and adding local spices and chillies. A quality vindaloo should also have depth of flavour from cinnamon, cardamom and cloves.
