Vdolek - a traditional Czech fried pastry
Vdolek is a traditional Czech fried yeast pastry with an oval shape and a depression in the center. The dough is made from flour, eggs, milk, yeast, sugar, and a pinch of salt. After rising, the dough is shaped into oval discs and fried in hot oil until golden. Fried vdolky are filled with plum jam, curd cheese, or marmalade and dusted with powdered sugar. They are a typical fairground food and a classic of Czech home cooking. They taste best fresh and warm.
- Vdolky are an essential part of Czech fairs, markets, and festivals.
- The depression in the center of a vdolek is formed with a thumb or spoon before frying.
- In Moravia, vdolky are also called koblihy or šišky depending on the region.
- A properly fried vdolek should be crispy on the outside and soft and fluffy on the inside.
