Tortilla - Mexican flatbread
Tortilla is a thin, flat bread made from corn or wheat flour, forming the foundation of Mexican cuisine. Tortillas serve as wrappers for tacos, burritos, enchiladas, quesadillas, and other traditional Mexican dishes.
- Corn tortillas have been prepared in Mesoamerica for over 10,000 years.
- Nixtamalization of corn releases niacin and increases the tortilla's nutritional value.
- Over 80 billion tortillas are consumed annually in Mexico.
- Wheat tortillas spread with the arrival of the Spanish in the Americas in the 16th century.
