Tarte Tatin, Upside-Down Apple Tart
Tarte Tatin is a famous French upside-down tart where apples are first caramelised in butter and sugar in a pan, covered with pastry and baked in the oven. After baking the tart is flipped so the apples end up on top.
According to legend it was created by accident at the hotel of the Tatin sisters in Lamotte-Beuvron. The key is using firm apples (Granny Smith or Golden) and thorough caramelisation. It is served with crème fraîche or vanilla ice cream.
