Tamales - traditional Mexican corn parcels

Tamales are one of the oldest foods on the American continent, cherished in both Mexican and Peruvian cuisines. Corn flour dough is spread onto a corn husk, filled with meat or cheese, wrapped up, and steamed.

In Mexico, tamales feature fillings like mole, pork, or jalapeño. In Peru, they are often wrapped in banana leaves and filled with chicken or olives. Both traditions make tamales a centrepiece of celebrations and holidays.
