Spanish tortilla - potato omelette

Spanish tortilla (tortilla española) is the most typical Spanish dish. Unlike the Mexican tortilla, it is a thick omelette made from potatoes, eggs, and onion cooked in a pan.

Potatoes are sliced and slowly fried in olive oil with onion, then mixed with beaten eggs. The key moment is flipping it onto a plate. The inside should remain slightly runny. It is served warm or cold, cut into triangles as tapas.
